I had a J-1 visa. The 2 years requirement applies to certain sponsors (such as governments). If you are sponsored by a for profit organization , the 2 years restriction will not apply. You must have a job offer within 30 days from graduation, if you don't have one you will have to leave. Also, the acadamic training period is 18 months vs 12 months for F-1.

Does anyone have experience with extending a J-1 visa (for the 18M academic training period rather than issuing an H1B) in Israel or Canada?

You can get an American Express Blue card for students without credit history. You can apply online and they would send the card via mail. Also, I was able to open my bank account before obtaining a social security number so I guess that the policy varies betwwen banks (Fleet bank in Boston)
